Weekends


My weekend was filled with:

-a delicious meal!  On Friday my daughter and I had basil pesto on pasta, the first of the season.
-patiently waiting for the weather to break-storms clouds rolled in yesterday evening and so many leaves landed in the pool.  We are happy that the trees on our property escaped damage.
-focusing on the sleeves of my cardigan.  Oh please be done soon :)
-wondering why it is still very hot after the thunderstorms.
-being thankful I have electricity, surrounding us are neighborhoods without power
-an afternoon with knitting friends
-a curry dinner made by my husband (I love when he cooks it tastes so much better)
-grocery list making and menu planning for the week

Basil Pesto

2/3 cup of olive oil
2/3 cup of parmesan cheese
1 cup of basil leaves
2 tbs of pine nuts (so worth the money!)
1/4 tsp black pepper
1/2 tsp of salt

whiz all of the ingredients in a food processor and pour on hot pasta.  A clove of garlic is nice to add in.  (my daughter and I like it without garlic).

  2. What a good weekend! That pesto sounds so yummy... I like less garlic too. Sorry it's still hot after the storms. It hasn't rained here in weeks...

  3. Karen, it is hot here too, but I wish we could have a little of the rain storms everyone else is getting, we are dry!
    I love, love pesto and really need to make some. My husband likes it like you do with less garlic, I like extra :)
    Do try the Way Better chips and let me know what you think. My problem is I may like them a little too much.

  4. I haven't made pesto in a long time----and came to find that was one thing surviving the heat! Basil galore! It even sort of "seeded" itself in the cracks of the bricks! I think I'll make some pesto this week, too! Great suggestion!

  7. Our weekend was bittersweet, and busy. I always cry when I leave my parents' house. :/ We were on the road for more than 12 hours because we had to stop in CT to get the rest of our things from the old house. And we spent today unpacking some more. Oh, and finding a $50 couch to replace the one we gave away before we moved. :)

    I am dying to try that pesto recipe. I think I'm going to have to buy a food processor… xo

  8. Love that picture -- oh, lovely lilac. We've been eating a ton of basil and pesto around here. I just tried walnuts instead of pine nuts and it worked great.

  9. I miss my basil plant. Must find some at the farmers' market this week. Not sure if it rained last night, but the power did blip. It is supposed to be cooler this week and I am glad. So glad your had a delicious husband made meal. I too love those.

  10. mmmm...pesto. love it. we have to leave out the pine nuts due to a nut allergy but you know, that leaves room for extra parm. i can live with that :)

  11. oooh, pesto! I haven't made it yet this year, our basil isn't quite abundant just yet. Almost!
    We had the same thing here, a big thunderstorm, and just as humid afterwards as it was before. There's nothing quite like summer humidity to get you excited for fall!

    And you're right. It always tastes amazing when someone else cooks it:)

  12. I love fresh pesto! K just discovered a basil plant on his grandma's balcony, so now he wants basil with everything. Maybe it's time to make some pesto ourselves!

  13. Loving fresh pesto!!!!!! We're too cheap to get the pinenuts, even though they are the best. Sunflower seeds and walnuts work pretty good too.
