Weekends are for memory making, 
relaxing and enjoying quiet moments of our days.

I love long weekends and this one will still be going for another two days :)  Yesterday, friends of ours came over to share a meal and celebrate my friend's retirement.  She now can knit whenever she wants.  For a surprise I bought a bakery cake.....you know the kind-it's knee deep in icing and totally not healthy at all to eat.  Just thinking about this cake makes me love it so.  Everyone said that the cake was too sweet, too rich but not a crumb was to be found.

We had fun catching up, laughing and picking up where we left off-just like we always do.  Today after Mass I've got tons of laundry to do and a master menu list to make.  Grilling season is upon us so my meals have shifted towards salads of all sorts.  One can never ever have too many salads in their life.

No special plans for the extra weekend holiday.  I have in mind a manic cast on frenzy of knitting projects because well because I can.

  1. We have a long weekend here, too - well, Monday is a holiday and then it's school holidays all week, so I guess my weekend will go on until the next one! :)

  4. Ahh retirement does sound wonderful being able to do what ever one wants. I started yesterday a new menu plan for us as now it is getting colder salads are just not cutting it everyone wants warmer food.

  5. I know exactly what kind of cake you are talking about! Glad you are having a great time Karen. It's quiet here, but that's okay, I am doing what I want and the only messes I'm cleaning up are the ones I've made myself.

    1. It's 50% quiet with one kid gone and I'll take it! There's a lull in this weekend with little to no activities and I have enough leftovers for two days :)

  6. Ohh I love those kinds of cakes!! Would you care to share sometime, all the different things you put in your salads? (Or have you already written a post on that in the past?) I love salads but am always looking for ways to change it up a bit.

    1. I eat the same salad: lettuce, carrots, chickpeas, sliced almonds, 1/2 avocado, balsamic vin. yum yum yum! sometimes I switch it up with cucumbers or cauliflower florets! If I have chicken I will replace the chickpeas with that, but I'm always hungry afterwards, so chickpeas are favored!

  8. omg...I KNOW that cake well. I'm an icing FREAK!!!!!!!! That good royal icing---buttery, thick, SWEET, YUMMMMMMY!!! (I'm the one who always takes the fork/knife to the icing left behind in the cake box. )

  10. It's a long weekend in Scotland too. I had a deadline for my uni course none the less, so I'm looking forward to my Monday off. I think I might read, eat and sleep.

  11. Love the photo Karen. A meal with friends is always nice, and that cake sounds like it was pretty darn good. I was thinking about salads today, I love salad season. Need to check my recipes so I can make sure I have everything on hand.

  13. cake is good and friends are great, but cake and friends together is pretty unbeatable!
    I'm with you on the laundry, and could certainly make use of some master menu planning had I the fortitude to see it through ;)

  16. Catching up with friends is always such a wonderful thing : Especially when it's to celebrate such amazing milestones. And a good fatty cake is always just that : GOOD!

    We had a wonderful sunny week-end filled with gardening, walks around the local botanical garden, running through sprinklers an BBQ dinner on the back porch so all in all, a simply wonderful week-end.
