Soup and Holidays


Potato Leek Kale Soup

1-2 tbs olive oil
1 small onion, chopped
2 leeks, chopped
4 cups of broth
6 small potatoes, peeled and cubed
3-4 cups of chopped kale
1 tsp thyme
1/2 tsp pepper
1 tsp nutritional yeast

lightly saute the onion and the leeks until slightly translucent, add the broth and the potatoes, bring to a boil then simmer for 20 minutes, add the kale and the seasonings and boil another five minutes.

enjoy!

I had this soup yesterday and my oh my did it taste good!  My husband is battling a sinus infection and an asthma cough, I thought some soup would make him feel better and the vitamins from all the greens would be an extra boost.  Also, I am trying not to catch this little bug.

The house is decorated and daily I sit in the evening knitting and enjoying the view. I've been busy with knitting and reading, somewhat recovering from all the busy that happened last week.  Before you know it, Christmas will be here so I'm slowing down and savoring the moments.

  2. yummy....kale seems to be the 'miracle' green these days. hopefully it will do the trick for you and hubby! Your tree is lovely....hoping mine gets delivered sometime this afternoon. My hubby is in Kenya....so the job of decorating it falls to me. (I'm trying to get the grands to spend the night tonight to help!!!!)

  4. ahh, tis the season. We have all passed the cold around here too. My hubby always tries to out do us, his turned into a sinus infection as well!
    You tree looks very festive! Sound like some wonderful evenings you are having. I am doing some knitting but can't get our house decorated due to the woodwork still going on. That seems to take forever.

  6. I've made a soup very similar to this before and quite enjoyed it. Your tree looks very pretty. I'm like you - I enjoy knitting in the evening next to the Christmas tree. Hopefully ours will be up early next week. I hope you stay well, and that your husband makes a quick recovery. :-)

    I love your tree. Ours is going up this weekend. Must get kittens out of the extra bedroom and start painting it monday. I love the busy and the quiet of the Season...

  12. Okay...so kale and leeks go on the grocery list for the upcoming week! That soup sounds so delicious! I've been battling something the last several days also...I'm trying to get in some extra rest here and there.

    Your tree is beautiful, Karen. I love the lights on the tree...and the one in the snowman in our kitchen. Those are the first two lights I turn on in the mornings when I get up!
