Breakfast Oats with Blueberries
I stumbled upon another obsession with food, first it was avocados and now it's soaked oats (breakfast will never be the same). I'm probably one of the few people that like cold breakfasts, so when I came across "soaked overnight oats", I read "I don't have to cook at the crack of dawn" oats. To make this delicious dish I measure out 1/2 cup of rolled oats (I use gluten free ones) and 1/2 cup of "milk". I am currently using light soy milk. Mix it together, cover it up overnight. In the morning it looks like the above photo.

I'm sure you can imagine the possibilities-brown sugar, maple syrup, walnuts, almonds, cinnamon, bananas, cherries, raisins-and for those of you that enjoy a hot breakfast you can warm it up.
I continue to listen to various podcasts, the knitting and the literary kind. The birds are sleeping in these mornings and dare I say that it is a little later when the sun rises (this is probably wishful thinking on my part). My second hand listening has been the Steely Dan channel on pandora, my husband has had that on every single time we've been in the car.

Pooh glass! We just had the lone Tom and Jerry glass out yesterday :) lots of good memories in those little glasses. I will try the oats ~ sounds wonderful for a summer breakfast!ReplyDelete

yum! not a whole lot different from my blueberry/yoghurt/granola breakfast! (on vacation...one of the grands couldn't get over that I ate that EVERY morning!!!---I say, when you find a winner, you stick with it!!!)ReplyDelete

Yes! Overnight oats! So good - but I agree with you that the hardest part is remembering to make them before bed. :) Chia seeds are amazing in there too - so good for you and they add a fun texture! Love your Pooh glass too - super sweet!ReplyDelete
we soak our steel cut oats in water with some sea salt + a healthy glug of kefir. but in the morning we cook them. the leftovers get stored in the fridge + heated up in the morning.ReplyDelete
